A Spanish way with spinach.
Ingredients
- 50 g seedless raisins or sultanas
- 1 kg fresh young spinach washed and trimmed
- 3 tbsps olive oil
- 1 small garlic cloves peeled and crushed
- 3 tbsps pine nuts
- sea salt and black pepper
- croutons to garnish optional

- Pour boiling water over the dried fruit and set aside to plump up while you cook the spinach.
- Put the spinach into a large saucepan with a little boiling water and a pinch of salt. Cook for 2-10 minutes until wilted and tender then drain well, squuezing out excess liquid with your hands.Chop or shred.
- Heat the olive oil in a frying pan and gently saute the garlic for 2-3 minutes. Add the spinach, pine nuts and drained fruit. Season to taste.
- Cook gently for 5 minutes more, then serve with some croutons sprinkled over.
