An easy and healthy breakfast from ” Alice’s Cook Book” by Alice Hart. The soaked oats and fruit juice will keep in the fridge for several days, ready to be customised as preferred.
Ingredients
For the Bircher:
- 300 g rolled oats
- 350 ml cloudy appple juice
- 150 ml milk or water
- 150 g whole almonds roughly chopped- or use flaked almonds
- 3 British eating appples
To serve:
- milk
- thick natural yoghurt
- 4 tbsps mixed seeds e.g pumpkin, sunflower, sesame
- seasonal berries or extra chopped apple
- mild runny honey

Instructions
- Start to prepare the night before you want to eat. Mix the oats, apple juice and milk or water with half the almonds in a large bowl. Cover and refrigerate.
- When you are ready for breakfast coarsely grate the apples, avoiding the cores, and fold into the oat mixture.
- Now, do your own thing with your breakfast. Add milk or yoghurt, a spoonful of the remaining almonds, seeds , berries, apple or honey to sweeten.
