Ingredients
- 110 g caster sugar
- 85 g light muscovado sugar
- 450 ml water
- 500 g good eating apples peeled, cored and cut into eighths
- 60 g raisins
- freshly grated nutmeg
- 4 tbsps greek yoghurt to serve

- Put the two sugars into a pan with the water and stir over a moderate heat until completely dissolved. Bring up to the boil and add the apples, raisins and a scraping of nutmeg.
- Simmer very gently for about 30 minutes until the apple slices are very tender, Scoop them out into a shallow bowl with a slotted spoon and add another fresh rasping of nutmeg.
- Boil the juices down for 3 or 4 minutes until syrupy then pour over the apples.
- Serve warm or cold with greek yoghurt.
