A refreshing Thai inspired salad from ” Dominique’s Kitchen” by Dominique Woolf.
Ingredients
- 2 tbsps lime juice
- 1 tbsp fish sauce
- 1 tbsp soft brown sugar
- 1/2-1 tsp dried red chilli flakes
SALAD:
- 1 Granny Smith apple cut into matchsticks
- 100 g red cabbage thinly shredded
- 1/4 red onion finely sliced
- a small handful coriander chopped
- a small handful mint leaves chopped
- 30 g toasted hazelnuts chopped
- 2 tbsps shop bought crispy fried onions optional

Instructions
- To make the dressing mix the first four ingredients together in a small bowl making sure the sugar dissolves. Set aside.
- Put the apple, cabbage, onion, coriander and mint in a large bowl and pour over the dressing. Combine then tip into a serving dish if using. Sprinkle over the nuts and the optional crispy fried onions. Serve immediately.
