A favourite way with Apricots “30 Ingredients” by Sally Clarke. I didnt add any lavender in the version pictured and it was still most delicious.
Ingredients
- 650 g fresh apricots
- 1 vanilla pod cut in 2 lengthways
- 150 ml white wine
- 100 g caster sugar
- 150 ml water
- 1/2 cinnamon stick lightly broken
- 10-12 sprigs lavender keep 6 of the best for decoration

- . Wash and remove stems of the apricots and pull apart at the natural line. Place snugly in an ovenproof dish skin side down,Preheat the oven to 180 C.
- Bring all the remaining ingredients ( except the lavender for decoration) to a rolling boil in a small pan for a few minutes. Pour over the apricots and cover the dish with foil.
- Bake for 20-30 minutes then remove the foil and continue to bake for 5-10 minutes more. The apricots should be soft. Remove the lavender and cinnamon sticks. Arrange the fresh lavender to decorate.
- Serve with ice cream.
