Asian Style Slaw (4-6)

A favourite riff on slaw from ” Dominiques Kitchen” by Dominique Woolf. This can be served as a side for barbecued or griddled meats, or as a light lunch- perhaps with some prawns added.

Instructions
  1. Combine the ingredients for the dressing in a small bowl and stir, making sure the sugar is dissolved.
  2. Put the cabbage, carrot and onion into a large bowl. Pour in the drsssing and toss well.
  3. Place the slaw in a serving dish if using. Mix in the peanuts, coriander and mint and eat immediately.
