A favourite riff on slaw from ” Dominiques Kitchen” by Dominique Woolf. This can be served as a side for barbecued or griddled meats, or as a light lunch- perhaps with some prawns added.
Ingredients
- 200 g white cabbage shredded
- 2 large carrots shredded with a julienne peeler or grated
- 1/2 medium red onion finely sliced
- 50 g salted peanuts chopped
- a large handful coriander chopped
- a large handful mint leaves chopped
DRESSING:
- 1 clove garlic crushed
- 1 red chilli finely chopped ( desseded if wished)
- 4 tbsps lime juice ( about 2-3 limes)
- 2 tbsps caster sugar
- 2 tbsps fish sauce
- 2 tsp rice vinegar

Instructions
- Combine the ingredients for the dressing in a small bowl and stir, making sure the sugar is dissolved.
- Put the cabbage, carrot and onion into a large bowl. Pour in the drsssing and toss well.
- Place the slaw in a serving dish if using. Mix in the peanuts, coriander and mint and eat immediately.
