Ingredients
- 6 large flat field or Portabella Mushrooms wiped clean
- 2 plump cloves garlic peeled and finely sliced
- 4 tbsps olive oil
- 2 oz butter
- 3 tbsps Madeira or sweet sherry
- 1 tbsp dark soy sauce

Instructions
- Preheat oven to 200 C, 180 Fan, Gas 6.
- Place the mushrooms in a roasting tin and scatter over the garlic, olive oil, madeira, soy and knobs of butter.
- Bake in the oven for 20 minutes or until soft and tender, basting once during cooking with the pan juices.
- When ready taste the liquid in the pan and add a squeeze or two of lemon if it needs to be any sharper. Check the seasoning and serve.
