Ingredients
- 1 1/2 tsp black peppercorns
- 1/2 nutmeg
- 25 g candlenuts , cashew nuts or roast peanuts
- 1 tsp sesame seeds
- 60 g shallots peeled and roughly chopped
- 25 g fresh ginger peeled and roughly chopped
- 40 g galangal ( or extra ginger) peeled and roughly chopped
- 15 g peeled fresh turmeric, chopped or 1 tsp ground turmeric
- 3 fat lemongrass stalks core chopped
- 20 g garlic peeled
- 2 medium hot red chillies seseeded and roughly chopped
- 3 red birds eye chillies roughly chopped
- 1 tsp shrimp paste
- 1 tbsp palm sugar
- 1 tsp salt
- 3 tbsps vegetable oil
- juice of 1/2 lime

Instructions
- Put the peppercorns, nutmeg, nuts and sesame seeds into a spice grinder and grind to a fine powder.
- Tip into a mini food processor and add the remaining ingredients. Blend to a very smooth paste.
