One of my favourite cookery books is ” Brit Spice” by Manju Malhi (2002) and this makes a regular appearance on the table for breakfast. Ive added the turmeric.
Ingredients
- 2 tbsps vegetable oil
- 1 medium onion peeled and chopped
- 1 fresh green chilli deseeded and finely chopped
- 1/4 tsp garam masala
- 1/4 tsp ground cumin
- 1/4 tsp ground coriander
- 1/2 tsp ground turmeric
- 400 ml tin organic baked beans
- sea salt to taste

Instructions
- Heat the oil in a small saucepan and add the onion. Fry for a minute then add the chilli and cook for 2 minutes, stirring continuously, until the onion begins to turn golden brown.
- Add the spices and fry for a minute more. Add the beans, reduce the heat and cook for 3 minutes. Taste and season with salt if needed.
