Ingredients
- 4 medium sized ripe bananas
- 180 g wholewheat flour
- 175 ml sunflower oil
- 175 g brown sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- pinch nutmeg optional
- 2 tbsps sunflower seeds optional
- 11/2 tsps baking powder
- 1/2 tsp baking soda
- pinch salt

Instructions
- Preheat the oven to 180 C and lightly grease a loaf tin or rectangular cake tin.
- Add the sugar and bananas to a mixing bowl and mash well until pureed.
- Add the oil, cinnamon, vanilla and nutmeg to the bowl and stir well.
- Sieve the flour, baking powder, baking soda and salt into the bowl.
- Fold the dry ingredients into the bowl carefully and evenly, ensuring they are well blended.Add the sunflower seeds, if using, and gently fold.
- Tip the mixture into the greased tin and bake for 35-40 minutes or until risen and a golden brown colour.
- When cooled, remove from the tin. Slice and serve warm or cold.
- Store in a lidded container in the fridge or wrap in cling film.
