A very good Albanian recipe for sweet potatoes which I found in ” Round the World in Eighty Dishes”. The recipe is by the late Lesley Blanch.
Ingredients
- 4 large sweet potatoes
- salt and freshly ground black pepper
- 2 tbsps butter
- nutmeg
- lemon half
- 100 ml clear honey

Instructions
- Parboil the potatoes in their skins in salted water for about 5 minutes. When cool enough to handle peel and cut into thick chunky slices.
- In a large frying pan melt the butter and fry the potatoes until lightly golden. Grate over some nutmeg, squeeze over some lemon juice and drizzle with the honey. Season with 1 tsp of salt and add pepper to taste. SErve immediately.
