This goes well with grilled sausages.
Ingredients
- 600 g floury potatoes
- 1 large cooking apple peeled, cored and diced
- 60 g butter
- 2 medium fresh beetroot cooked, peeled and grated
- milk
- 2 tbsps chopped flat leaf parsley
- sea salt & black pepper

Instructions
- Peel the potatoes and cut into large chunks. Put into a pan with salt and enough water to cover by about an inch. Bring to a boil then simmer, uncovered for 5 minutes. Add the apple and continue cooking until the apple and potatoes are both very tender. Drain carefully.
- Mash the potatoes and apple with the butter then over a low heat beat in enough milk to give a light mash.
- Stir in the beetroot and the parsley. Season well and serve immediately.
