A favourite autumn recipe from Sophie Grigson. Adjust the levels of sugar to your taste. Serve hot or cold with clotted cream, creme fraiche, yogurt or scoops of vanilla ice cream.
Ingredients
- 8 oz caster sugar
- 1/2 pint water
- 1 lb eating apples peeled, cored and sliced
- 1 stick cinnamon
- 1 star anise
- 3 strips lemon zest
- 8 oz blackberries

Instructions
- Put the sugar and water into a large pan and stir over a moderate heat until the sugar has dissolved.
- Add the cinnamon, star anise and lemon zest and bring to a boil. Add the apples and simmer very gently for 5 minutes.
- Add the blackberries and continue to simmer until the apples are very tender and the compote is thick.
- Serve hot or cold with your preferred accompaniment.
