A hot fruity dessert from Nigel Slater’s ” Real Good Food”.Serve with cream or ice cream.
Ingredients
- 225 g plain flour
- 2 tsps baking powder
- 3 tbsps cornflour
- 100 g cold unsalted butter
- 3 tbsps caster sugar
- 2 tbsps double cream
Filling:
- 1 kg blackcurrants removed from their stalks
- 4 tbsps sugar
- 2 tbsps flour
for glazing

Instructions
- Sieve the flour, baking powder and cornflour into a large bowl. Rub in the butter until it resembles fine breadcrumbs. Add the sugar and bring the mixture together with the cream to form a soft dough. Chill for 15 minutes or so in the fridge.
- Heat the oven to 190 c, 175 Fan, Gas 5, In a second bowl mix the blackcurrants with the sugar and flour and place in a large pie dish. Break off pieces of the dough and place them randomly over the fruit.
- Brush with cream and scatter over a little sugar. Bake in the preheated oven for 40 minutes until the pastry is golden and the fruit bubbling.
