A fantastic snack from ” Eat Drink Live” by Fran Warde. If you are not a fan of blue cheese you could use Mozzarella, Taleggio or soft goats cheese.
Ingredients
- 4 slices sourdough bread or 8 slices baguette
- 1 plump garlic clove
- 2 tbsps olive oil
- 100 g blue cheese
- 2 tomatoes sliced
- sea salt and black pepper

Instructions
- Toast the bread slices on each side and rub with the garlic, then sprinkle each slice with 1/2 tablespoon olive oil.
- Crumble half the blue cheese with your fingers and divide it between the 4 slices of toast. Top with the sliced tomatoes in a single layer.
- Cover with the remaining cheese and sprinkle with salt and pepper.
- Cook the crostini under a hot grill, until the cheese melts and begins to brown lightly, about 4-5 minutes. Serve hot or warm.
