I found this in the excellent book ” Home Food” by Olia Hercules but it originates from a cafe called Tromso in Forest Gate . Sadly the owners have moved back to Norway but were happy for this easy brunch or supper to be shared.
Ingredients
- 1 egg hard boiled and sliced
- 2 pieces dark rye bread
- 100 g mayonnaise
- 100 g brown shrimps
- a few dill sprigs
- 1 pickled cucumber sliced lengthways

Instructions
- Spread the bread with some mayo and divide the shrimps between the two. Sprinkle over a generous amount of dill. Serve with the sliced egg and pickle.
