Ingredients
- 80 ml buttermilk
- 20 g fresh coriander leaves finely chopped
- 3 plump garlic cloves peeled and chopped
- 2 tbsps lemon juice
- 2 tbsps olive oil
- 1 tbsp clear honey
- 1 tsp ground turmeric
- 1 tsp ground ginger
- 1 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp ground black pepper
- 500 g boneless, skinless free range chicken thighs or breasts cut into bite sized chunks

- Put all the ingredients except the chicken in a large bowl and stir to combine. Add the chicken and turn to coat with the marinade. Cover and leave to marinate in the fridge for 2-12 hours.
- When ready to serve thread the chicken onto skewers. Preheat a barbecue or heat a griddle or frying pan over a high heat. Place the skewers on your barbecue or pan and cook for 5 minutes on each side, turning now and then, until golden on all sides and cooked through. Serve immediately.
