A refreshing salad from Morocco to serve as part of a Mezze.
Ingredients
- 200 g large organic carrots
- 1 large Cucumber
- 3 tbsps olive oil
- 1 tbsp dried thyme
- 1 tsp lemon juice
- 150 g pitted black olives chopped
- 80 g shelled walnuts chopped
- sea salt

Instructions
- Peel and segment the oranges then refrigerate until ready to use.
- Peel the carrots with a vegetable peeler and discard the peel. Then continue to peel the carrots lengthways into ribbons. Set aside. Repeat with the cucumber except when you reach the seeds turn the cucumber and repeat on the other sides, then discard the seedy core. Set aside, keeping separate from the carrots.
- With a fork whisk together the olive oil, thyme and lemon juice in a small bowl.
- Just before serving toss together the orange, carrot, cucumber, olives, walnuts and dressing in a large bowl. Sprinkle lightly with sea salt, then serve straight away.
