Treacle and Cocoa Cake

A rich and squidgy cake which provides a good hit of iron from Xanthe Clay.

Rhubarb Cake (8)

An easy cake to bake from ” Cook Simple” by Diana Henry. You can use other fruit if you like, for example peaches, pears or apricots. Just be sure the fruit is tender and ripe or it wont cook .

Plum and Hazelnut Cake (8)

A good cake for pudding or afternoon tea from ” Cook Simple” by Diana Henry. This can be varied replacing the plums with pears and the hazelnuts with walnuts.

Lemon, Buttermilk and Black Pepper Cake (8-10)

A most delicious cake from ” Flavour” by Ruby Tandoh.

Chocolate and Almond Cake (8-10)

I visited a local Italian restaurant with friends last night and unfortunately the food was somewhat underwhelming . The best course was my dessert of Torta Caprese, but even then I felt there was room for improvement. This is a chocolatey, moist and dense cake from Rachel Roddy’s ” Two Kitchens”. You can eat as a cake or serve as a pudding with cold cream or ice cream as you prefer.

Clementine Cake with Fennel Seeds (6-8)

Apple and Blackberry Cake (8)

A delicious seasonal cake for autumn from Tamal Ray. If you like you can use frozen blackberries, or raspberries.

Rye Chocolate Brownies (12)

Rich, gooey and nutty Brownies from Claire Ptak’s “The Violet Bakery Cookbook”. These are at their best on the day of baking.

Apple, Thyme and Cheddar Scones

Tasty and Aromatic Scones from ” Apple” by James Rich, again best served fresh and warm from the oven. The recipe makes 8-10 scones.

Pumpkin Scones (6)

A seasonal recipe from Nigel Slater. The scones are at their best when served warm but will keep overnight in an airtight container if they last that long.

Chocolate Expresso Cake (6)

A rich flourless chocolate cake from ” Old Food” by Jill Dupleix. She adapted it from a recipe by Elizabeth David in ” French Provincial Cooking”. It makes a great pudding for a spacial occasion served with creme fraiche or custard, but can also be sprinkled with icing sugar or cocoa powder and served as a cake.
