I recently visited the north of Italy where i returned to the same restaurant in Stresa on Lake Maggiore three times . Their seasonal special, home made sausages with chestnuts and polenta, was so tasty I had it twice. I haven’t been able to find a recipe for that dish, but this dish from ” Rick Stein’s Food Heroes” is a good second best. If you cannot get hold of Luganega sausages in your local Italian deli then any Italian sausages flavoured with garlic and fennel will do.
I love this recipe for spicy sausage rolls from Thomasina Miers. A couple of years ago I made them for a New Year gathering at a friends and they went down very well. They can also be made in advance and frozen. Serve with onion marmalade or chutney.
A Puglian dish of little fennel sausages stewed with waxy potatoes and lemon zest from Rick Stein’s ” Mediterranean Escapes”. If you cant get Luganega sausages ( try Italian delicatessans) then use meaty pork chipolatas and add a tsp of fennel seeds to the onions when you fry them.
A warming and comforting supper from ” Organic” by Sophie Grigson and William Black. Serve with heaps of mashed potato to soak up the juice and plenty of mustard.
