A luxurious version of Macaroni cheese from ” The Seafood Shack ” by Kirstie Scobie and Fenella Renwick. I visited Ullapool in the 1980s but this makes me want to return to try out the original version and other good things this restaurant serves.
A delicious side for autumn and winter. It’s from ” The Abel & Cole Veg Box Companion” by Keith Abel. It can be made a day or two in advance and be reheated. It also freezes well.
A simple courgette soup from Mexico which I found in ” Mexican Food made Simple” by Thomasina Miers. Serve as a starter or for a light lunch or supper, perhaps with Cheese and Courgette Filo Parcels .I sometimes serve this with Parmesan Croutons .
A light summery pasta dish from ” Cook” by Thomasina Miers. If you like you could toss in about 100g each of Serrano ham and Manchego cheese at the end.
A delicious recipe for a family meal from ” The Weekend Cook” by Angela Hartnett. If you like you can add some diced potatoes to the roasting tin 40 minutes before the end of the cooking time, letting them roast in the lamb fat and juices. You could make a ratatouille to serve alongside, or cauliflower cheese or a simple fresh green salad.
A very good chicken pie from ” The Weekend Cook” by Angela Hartnett. If you have some good bacon or pancetta then throw this in too. Serve with boiled frozen peas.
This is Yotam Ottolenghi’s version of this classic chicken dish from ” Simple”. Its very easy to prepare but the chicken needs to be marinaded at least one day in advance and preferably two.
