A good vegetarian main from ” Butter” by James Martin.
Ingredients
- 1 large cauliflower sliced into 4 steaks
- 125 g butter softened
- 1 tsp salt
- 2 red chillies deseeded and finely sliced
- 1/2 bunch mint roughly chopped
- 1/2 bunch coriander roughly chopped
- 1 large white endive leaves separated
- 50 g Caramalized Crispy Onions
- 50 g cashew nuts toasted
- 20 g black and white sesame seeds toasted
- 25 g fresh pomegranate seeds
Tahini Dressing:
- 5 tbsps tahini
- 20 g sesame seeds
- 300 g cream cheese
- sea salt and black pepper

Instructions
- Preheat oven to 190 C, 170 Fan, Gas 5.
- Smother the cauliflower in the butter and sprinkle over the salt. Place on a baking tray and bake for 30 minutes until golden, caramelised and cooked through. Once cooked, baste the cauliflower with all the juices in the tray so the cauliflower soaks them up.
- Mix all the ingredients for the dressing in a bowl until smooth.
- To serve, spread the dressing generously onto a plate. Add the cauliflower. Scatter over the chillies, herbs, endive, crispy onions, cashew nuts and sesame and pomegranate seeds.
