These muffins are from ” Cook in Boots” by Ravinder Bhogal and can be served hot or cold.

  1. Preheat the oven to 190 C, Gas 5. Line a 12 hole muffin tin with muffin cases.
  2. Sift the flour and baking powder into a large bowl and add the salt and mustard powder. Mix well.
  3. Whisk together 1 egg and the milk and pour it into the flour. Fold in the cheese, sausages and thyme leaves. Be careful not to overmix- it should be lumpy and textured.
  4. Spoon the mixture generously into the muffin cases. Beat the second egg and brush over the muffins with a pastry brush to give them a mellow golden glaze.
  5. Bake for 15-20 minutes until they are cooked through.
