These muffins are from ” Cook in Boots” by Ravinder Bhogal and can be served hot or cold.
Ingredients
- 275 g plain flour
- 1 hpd tsp baking powder
- 1 tsp sea salt
- 2-3 hpd tsp English Mustard powder
- 2 large eggs
- 225 ml full fat milk
- 125 g Cheddar or Gruyere cheese
- 225 g good quality pork sausages fried and sliced
- leaves from a few sprigs of thyme

Instructions
- Preheat the oven to 190 C, Gas 5. Line a 12 hole muffin tin with muffin cases.
- Sift the flour and baking powder into a large bowl and add the salt and mustard powder. Mix well.
- Whisk together 1 egg and the milk and pour it into the flour. Fold in the cheese, sausages and thyme leaves. Be careful not to overmix- it should be lumpy and textured.
- Spoon the mixture generously into the muffin cases. Beat the second egg and brush over the muffins with a pastry brush to give them a mellow golden glaze.
- Bake for 15-20 minutes until they are cooked through.
