A recipe for roast chicken from Nigel Slater’s ” Real Food” 1998
Ingredients
- 6 free range chicken pieces bone in
- good fruity olive oil
- 2 plump garlic cloves
- a lemon
- 1 large handful basil
- 1 wine glass medium dry white wine

- Season the chicken and put the pieces in a roasting tin. Pour over enough fruity olive oil to moisten them and make a shallow pool in the tin.
- Squash the garlic in its skin and tuck it in with the chicken. Squeeze the lemon over the chicken and drop the empty shells in too.
- Roast in a preheated oven 200 C Gas 6 for 30 minutes.
- Tear up the basil leaves and toss them about a bit with the chicken. Return to the oven for 10 minutes.
- Remove from the oven and pour over the wine. Put the roasting tin over a hot flame and let the wine bibble for 1 minute.
- Serve with a green salad and some mashed potato.
