Ingredients
- 1 x 2-2.5 kg free range chicken cut into 10 pieces
- 1 large head garlic separated into unpeeled cloves
- 2 unwaxed lemons cut into chunky eighths
- small handful fresh thyme
- 3 tbsps olive oil
- 150 ml white wine
- freshly ground black pepper

- Preheat the oven to 160 C, Gas 3( adjust for Fan Oven) . Put the chicken pieces into a roasting tin with the garlic, lemon and thyme. Add the oil and mix everything together with you hands, then spread the mixture out making sure all the chicken pieces are skin side up.
- Sprinkle over the white wine and black pepper. Cover tightly with foil and cook in the oven for 2 hours.
- Remove the foil and increase heat to 200 C, Gas 6 and cook for a further 30-45 minutes until the skin is golden brown and the lemons are starting to caramalise at the edges.
- Serve with a vegetable on the side.
