A Vietnamese way with chicken from ” The Best of Nicole Routhier”. You can replace the chicken with Duck or Prawns, adjusting coking times as needed.
Ingredients
- 2 tbsps vegetable oil
- 1 large onion peeled and cut into wedges
- 1 lb boned and skinned chicken thighs cut into 2" pieces
- 6 plump garlic cloves peeled and thinly sliced
- 1 inch piece ginger peeled and finely shredded
- 2 tbsps honey
- 2 tbsps fish sauce
- 2 tbsps soy sauce
- 1/2 tsp 5 Spice Powder
- black pepper
- coriander sprigs to garnish

- Heat the oil in a wok over a high heat. Add the onion and stir fry until lightly browned.
- Add the chicken and stir fry for about 3 minutes until browned.
- Add the garlic and ginger and continue to stir fry until fragrant. Stir in the honey, fish sauce, soy sauce and 5 spice powder.
- Toss to combine the ingredients and cook until the chicken is nicely glazed with the sauce, about 3 minutes. Transfer to a hot platter.
- Sprinkle with the black pepper and garnish with coriander. Serve with rice and a vegetable dish.
