Here’s an easy supper from Nigel Slater’s ” Real Cooking” for you.
Ingredients
- 6 free range chicken thighs
- juice of 4 limes
- 2 stalks lemon grass trimmed and thinly sliced
- 4 small hot red chillies deseeded and chopped
- 1 inch piece ginger peeled and shredded
- 4 spring onions trimmed and chopped
- 2 plump garlic cloves peeled and finely chopped
- 3 tbsps honey

Instructions
- Put the chicken pieces in a roasting tin. Cut slashes across the skin, cutting slightly down into the flesh.
- Mix the lime juice, lemon grass, chillies, ginger, spring onions, garlic and honey together. Add 1 tsp salt.
- Pour the marinade over the chicken pieces and rub it well into the slits. Set aside for about 2 hours, turning the chicken once in the marinade.
- Heat the oven to 200 C, 180 Fan. Put the chicken in the oven and cook for 40-45 minutes until the chicken is golden and fragrant.
