  1. Put the chicken pieces in a roasting tin. Cut slashes across the skin, cutting slightly down into the flesh.
  2. Mix the lime juice, lemon grass, chillies, ginger, spring onions, garlic and honey together. Add 1 tsp salt.
  3. Pour the marinade over the chicken pieces and rub it well into the slits. Set aside for about 2 hours, turning the chicken once in the marinade.
  4. Heat the oven to 200 C, 180 Fan. Put the chicken in the oven and cook for 40-45 minutes until the chicken is golden and fragrant.
