A slightly more elaborate recipe for chilli cheese on toast from ” Cook in Boots” by Ravinder Bhogal.
Ingredients
- 1/2 small red onion finely chopped
- 1 tomato finely chopped
- 1 green chilli deseeded and finely chopped
- 1/4 green pepper deseeded and finely chopped
- 3 tbsps chopped fresh coriander leaves
- 2 tsps sweet chilli sauce or tomato ketchup
- freshly ground black pepper
- 2 slices thick white bread
- 100 g cheddar cheese grated

Instructions
- Preheat the grill. Mix together the onion, tomato, chilli, green pepper, coriander and sweet chilli sauce or tomato ketchup. Season with pepper.
- Toast one side of the bread under the grill, then layer the vegetable mix over the untoasted side of the bread. Flash under the grill for 3 minutes, so the onion softens slightly.
- Top with the cheese and cook until golden and bubbling. Serve immediately.
