A recipe from ” Real Fast Food” by Nigel Slater 1992
Ingredients
- 4 sliced spring onions
- 4 plump cloves garlic peeled and finely chopped
- 3 tbsps groundnut oil
- juice of a l;emon
- 1/2 tsp sea salt
- 1 tbsp runny honey
- 1 tsp paprika
- 1/2 tsp mild chillli powder

- Mix together the spring onions, garlic, oil and lemon juice. Add the salt, honey, paprika, chilli powder and fresh chilli.
- Cut the chicken into 1" cubes and stir imto the above ingredients. Leave for at least 20 minutes but longer if you can- 1-2 hours would be good.
- Mix the ingredients for the sauce
- Heat a griddle pan until it is very hot and scatter over the chicken. Cook for about 8 minutes, turning once, until the pieces are crisp and shiny golden brown on the outside but still juicy within.
- Divide the chicken between the hot pitta bread or baps and add the lettuce and yoghurt sauce. Serve immediately.
