Chilli con Carne tastes better if is prepared a few hours in advance to allow the flavours to mingle. It is therefore a great dish for a relaxing supper with friends or a party, as all you have to do to serve it is heat it up and serve either with some plain boiled rice or jacket potatoes.
Ingredients
- 700 g lean minced beef
- 400 400 ml tin chopped organic tomatoes
- 100 g fresh mushrooms sliced
- 1 large onion peeled and roughly chopped
- 2 400ml tins red kidney beans drained and rinsed
- 1 tbsp olive oil
- 1 tsp dried or fresh oregano
- 2 tsps cumin
- 3 fresh red chillies deseeded and chopped

Instructions
- Heat the olive oil in a large saucepan and fry the onion over a medium heat for 3-5 mins until soft but not browned.
- Increase the heat slightly and add the meat, breaking up with a wooden spoon. Cook until nicely browned all over.
- Add the tomatoes, oregano, cumin, chillies, mushrooms and beans.
- Reduce heat and simmer for about 15-20mins. You can serve immediately or set aside for a few hours for the flavours to develop.
