Ingredients
- 1 lb choy sum, pak choi or mustard greens
- 3 tbsps olive oil
- 2 plump cloves garlic peeled and chopped
- 2 tbsps balsamic vinegar
- a handful golden raisins

Instructions
- Cut the greens into large bite sized pieces.
- Heat the oil in a shallow pan and gently fry the garlic until pale gold in colour. Add the balsamic vinegar and raisins.
- As soon as the raisins plump up add the greens. Fry for a minute until they wilt.
- Season with salt and pepper and serve immediately as a side dish.
