A very good version of tartare sauce from Claire Thomson.
Ingredients
- 150 g best-quality mayonnaise
- 1 small shallot peeled and very finely diced
- 2 tbsp capers roughly chopped
- 50 g small gherkins finely chopped
- ½ small bunch parsley finely chopped
- squeeze of lemon juice

Instructions
- Mix everything together, season to taste with salt and freshly ground black pepper, and put in a small serving bowl.
