My favourite frittata recipe is probably Courgette Frittata with Green Sauce but for a change here is another version with courgettes. This is from Jenny Linford’s ” The London Cookbook”.
Ingredients
- 2 tbsp olive oil
- 2 onions peeled and sliced
- 3 baby courgettes, halved lengthways finely sliced into rounds
- 6 free range eggs
- sea salt and black pepper
- a handful fresh mint leaves finely shredded
- 1 small soft goat's cheese sliced

- Heat the oil in a 25 cm heavy based pan. Add the onion and fry gently for 5 minutes.
- Add the courgette slices and fry very gently until softened. Meanwhile, beat together the eggs and season with salt and freshly ground pepper. Mix in the mint.
- Pour the egg mixture over the fried onion and courgette. Layer over the goats cheese. Fry very gently for about 10 minutes until almost set.
- Meanwhile preheat the grill then finish off the frittata under the grill to cook the top side.
