Romanesco cauliflower isĀ described as tasting like a cross between broccoli and cauliflower but with a nuttier flavour. This is my adaptationĀ of a recipe provided by the Riverford Organic Box scheme which operates in the UK.Its also good with purple sprouting broccoli instead of the romanesco. Wild Mushroom Macaroni Cheese (4)
Macaroni Cheese is great comfort food even if it usually blows the diet. The basic recipe can sometimes benefit from enhancement. This is my slightly simplified version of a recipe by Jimmy Garcia aka ” London’s Pop Up King”. Who would have thought this would be back on restaurant menus!
Oyster mushrooms, or other mushrooms can be used instead of wild mushrooms if preferred.

This root vegetable recipe is great comfort food for autumn/ winter. You can replace or add to the suggested vegetables with celeriac or swede and/ or add mushrooms. Nigel suggests serving with a trickle of yoghurt with some chopped mint. I think it works well with fried or poached egg. Ive also increased the spicing a little.
