A simple recipe for crab salad which i found in ” Med: A Cookbook” by Claudia Roden.
Ingredients
- 80 g cooked white crab meat
- a handful rocket leaves
- 1 good tomato finely diced
- 1 spring onion white part only, sliced
- 1/2-1 tbsp lemon juice
- 2 tbsps mild extra virgin olive oil
- 1 tbsps freshly chopped flat leaf parsley
- salt and black pepper to taste

Instructions
- Divide the crab meat between two plates and arrange the rocket, diced tomato and spring onion around it.
- Whisk together the lemon juice, olive oil and some salt and pepper and dress the salad. Serve sprinkled with the parsley.
