This recipe is from the Australia Women’s Weekly ” Easy Vietnamese Style Cookery”.
Ingredients
- 200 g bean thread vermicilli noodles
- 2 tbsps groundnut oil
- 3 plump garlic cloves peeled and crushed
- 1 small fresh red chilli deseeded and finely chopped
- 4 banana shallots peeled and chopped
- 500 g cooked crab meat
- 1 tbsp fish sauce
- 1 tbsp lime juice
- 2 tbsps chopped fresh coriander
- ground black pepper

Instructions
- Place the noodles in a heatproof bowl. Cover with boiling water and stand for five minutes. Drain then roughly chop.
- Heat the oil in a wok and add the garlic, chilli, shallots and crab meat. Stir fry until the liquid evaporates and the crab meat is lightly browned.
- Add the noodles, fish sauce, lime juice and coriander. Continue to stir fry until combined and heated through. Serve immediately.
