A seasonal recipe from ” Delia Smith’s Christmas”.
Ingredients
- 1 lb fresh cranberries
- rind and juice of 1 large orange
- 1 1/2 inch cinnamon stick
- 4 whole cloves
- 1 heaped tsp grated ginger
- 3 oz caster sugar
- 2-3 tbsps port

Instructions
- Chop the cranberries in a food processor then place in a saucepan.
- Pare off the coloured part of the orange rind with a potato peeler and cut it into very fine shreds. Add these to the pan together with the juice of the orange, the ginger, sugar and spices.
- Bring to a simmer, stir well, then cover and simmer gently for five minutes.
- Remove the pan from the heat and stir in the port. Allow to cool and pour into a serving bowl. Cover and keep in a cool place until needed. Remove the cloves and the cinnamon stick before serving.
