A fresh tasting salad typical of the Pacific coast in Costa Rica. The recipe is from ” World Food Cafe” by Chris and Carolyn Caldicott.
Ingredients
- 150 g white cabbage shredded
- 85 g Cucumber diced
- 1 ripe mango peeled and diced
- 1 red pepper deseeded and sliced
- 6 spring onions trimmed and thinly sliced
- 1 avocado pear stoned and cubed
- 2 handfuls watercress
- juice of 2 limes
- 1 garlic clove crushed
- 1 tbsp olive oil
- salt and pepper

Instructions
- Combine all the ingredients, season to taste and mix well. Chill for about 30 minutes before serving.
