Ingredients
- 200 ml good olive oil
- 5 plump garlic cloves peeled and halved
- 2 sprigs fresh thyme

Instructions
- Put the oil into a small saucepan and add the garlic and thyme. Set over a very low heat and warm through for about 15 minutes. The garlic and herbs should not begin to sizzle at any point- this will spoil the flavour.
- Set aside to cool then strain into a sterilised jam jar or bottle. Keep in the fridge until needed and use within a few weeks.
