This recipe is from ” Real Food” by Nigel Slater 1998
Ingredients
- 3 tbsps olive oil
- 8 juicy scallops with roes
- 50 g butter
- 4 plump cloves garlic peeled and finely chopped
- 1 handful fresh parsley leaves roughly chopped
- lemon halves to serve
- sea salt and black pepper

Instructions
- Warm the olive oil in a shallow frying pan until it starts to sizzle.
- Season the scallops with the salt and pepper then drop into the pan. Leave to cook for one minute until there is a golden crust on their underside. Turn over and cook the other side. This will take 2-3 minutes in all.
- Remove the scallops from the pan and put onto hot plates. Add the butter to the pan and when it starts to froth add the garlic, swirl around , then add the parsley.
- Pour the butter over the scallops and serve immedietely with the lemon halves.
