Ingredients
- 1 large fresh ginger root peeled and grated
- 4 sticks cinnamon
- 4 cloves
- 9 oz sugar
- 2 lemons or lime
- 1 3/4 pints water

Instructions
- Put the ginger into a pan and add the cinnamon, cloves, sugar and the zest and juice of the lemons or limes. Add the water.
- Bring to the boil, stirring constantly. Boil for 10 minutes. Stain into a jug and allow to cool. Check the flavour adding more water, lemon or lime juice or sugar as needed.
- Chill and serve with ice cubes and slices of lime or lemon.
