This salad came from Masterchef in 1992 where it was served as a starter for 4. I like to serve it as a main course with some new potatoes- especially Jersey Royals or Mids.
Ingredients
- Selection of Salad leaves e.g lambs lettuce, rocket, baby spinach, frisee, radichio
- 2 Somerset Goats Cheeses
Dressing:
- 1 tsp light soft brown sugar
- 1 tsp dijon mustard
- 1/4 tsp sea salt
- 1/2 tsp black pepper
- 4 1/2 fl oz walnut oil
- 2 tbsps cider vinegar
- 1 tbsp walnuts finely chopped
- 1 tbsp chopped sage leaves optional

Instructions
- Arrange the salad leaves on individual plates.
- Now make the dressing. In a bowl whisk together the sugar, mustard, salt, pepper and walnut oil until well blended. Add the cider vinegar and whisk again. Cover and leave in fridge until needed.
- Meanwhile cut each cheese in half and grill under a fairly high heat , cut side up, until melting and just golden. Arrange on the salad leaves.
- Add the walnuts and sage to the dressing at the last minute and drizzle over the salad to serve.
