A favourite version of Greek Salad from Chris and Carolyn Caldicott’s ” The Spice Routes”.
Ingredients
- 1/2 small cos lettuce finely sliced
- a handful chopped dill
- 2 medium carrots scrubbed and grated
- 1 red pepper finely sliced
- 1/4 small red cabbage, finely sliced
- 2 handfuls flat leaf parsley
- a handful mint leaves chopped
- 225 g feta cheese
- 150 g black olives
DRESSING:
- 6 tbsps olive oil
- 2 plump garlic cloves peeled and crushed
- 2 red chillies finely chopped
- juice of 2 lemons
- 1 tsp dried oregano
- sea salt and black pepper to taste

Instructions
- Mix the lettuce and the dill in a salad bowl. Combine the grated carrot, pepper, cabbage, parley and mint and pile the mixture over the lettuce.
- Add the feta cheese and olives. Mix together the dressing ingredients and pou on top.
