This is from Ken Hom’s ” The Taste of China”.
Ingredients
- 1 lb chinese long beans or any green beans
- 1 1/2 tbsps groundnut or sunflower oil
- 1/2 tsp sea salt
- 2 tbsps coarsely chopped garlic
- 1 tsp finely chopped ginger
- 1/2 cup chicken stock

Instructions
- Trim the beans and if using chinese long beans cut into 3 inch lengths.
- Heat a wok until very hot. Add the oil and salt then the garlic and ginger. Stir fry for 30 seconds.
- Add the beans and the chicken stock and cook for 4 minutes or until the beans are just tender and most of the liquid has evaporated. Serve immediately.
