Ingredients
- 2 lb juicy greengages
- 3 tbsps water
- sugar to taste
Crumble
- 6 oz plain flour
- 4 oz cold butter diced
- 2 oz ground almonds
- 2 oz caster sugar

Instructions
- Preheat the over to 200 C, 180 Fan Gas 6.
- Wash and halve the greengages, removing the stones. Place in a pie dish adding the water and sugar to taste.
- Sift the flour into a mixing bowl and add the diced butter. Using your fingertips rub the butter into the flour until it forms coarse crumbs. Then, using a metal spoon, stir in the ground almonds and sugar until evenly mixed.
- Cover the fruit with the crumble mixture and lightly press down. Place in the centre of the preheated oven and bake for 15 minutes before reducing the temperature to 190 c, 170 fan , Gas 5. Continue to bake for a further 15 minutes, Serve hot or warm.
