An easy recipe for chicken from Nigel Slaters ” Real Food” 1998.
Ingredients
- 400 g free range chicken boned
- 1 fresh hot red chilli deseeded and chopped
- 1 heaped tsp crushed dried chillies
- 2 cloves garlic peeled and chopped
- 2 pinches saffron
- 1 handful fresh mint leaves
- 4 tbsps olive oil
- 1 large lemon juiced
- lemon wedges to serve

Instructions
- Cut the chicken into 1 cm strips and put into a china or glass bowl.
- In a blender wghizz together the fresh and dried chillies, garlic, saffron, most of the mint, olive oil and most of the lemon juice. You should end up with a thick paste.
- Pour the paste over the chicken and mix gently, Set aside for about 30 mins.
- Heat a griddle pan and lightly oil it. When very hot add the strips of chicken and any marinade clinging to them. Griddle for 3-4 mins on each side until golden brown in patches.
- Season with a little salt and the remaining lemon juice and mint. Serve with lemon wedges, couscous and a green salad.
