A very good version of this Greek dish from ” A Flash in the Pan” by John Whaite.
Ingredients
- 2 tsps mixed black and white sesame seeds
- 3 tbsps Drizzle of runny honey
- 225-250 g block halloumi
- 2 tbsps olive oil
- a pinch dried oregano

- Set a small frying pan over a high heat. Once the pan is hot, add the sesame seeds and toast for a minute, until the seeds are slightly darker. Remove from the pan and set aside.
- Put the honey into a small saucepan and set over a medium heat, allowing it to warm while you prepare the halloumi.
- Cut the halloumi in half horizontally so you end up with two large slabs. Heat the frying pan over a medium high heat and add the oil. Once the oil is hot and starts to shimmer add the halloumi slabs and fry for a few minutes on each side, until a deep golden brown.
- Serve the halloumi drizzled with the warm honey and scattered with sesame seeds and dried oregano.
