This recipe for apple and potato mash originates in Germany. I found this version in Sophie Grigson’s ” Eat your Greens” and i like to serve it with sausages or pork chops.
Ingredients
- 2 lb floury potatoes
- 1 lb cooking apples
- sugar to season
- a generous knob butter
- sea salt and black pepper

- Peel the potatoes and cut into large chunks. Put into a large pan with just enough water to cover. Bring to the boil and simmer until almost cooked.
- Meanwhile peel, core and chop the apples roughly.
- Pour off about two thirds of the water from the potatoes, add the apples and simmer gently until they have collapsed and the potatoes are melting.
- Mash together and season with salt, pepper and a little sugar. Stir in the butter, then tip into a serving dish and serve.
