Last nights dessert was this very moreish dish from Diana Henry’s ” From the Oven to the Table”.

A comforting and wholesome version of an English classic pudding from ” Nigella Bites” by Nigella Lawson.

Coffee and Ricotta Cream (4-6)

A recipe from Rachel Roddy described as a cross between a mousse, a cheesecake filling and a blancmange. Serve with a glass of something- ideally more of what you have put in it.

Bread and Butter Pudding with Rum and Orange (8)

A rich version of this dish from ” A Pinch of Salt” by Stephen Ross. Stephen was the chef at Popjoy’s in Bath in the 1970’s and later The Olive Tree Restaurant at the Queensbury Hotel in the same city where these recipes came from. If you have leftovers it is good cold too, but in any event serve with cream.

Duck with Rum (4-6)

This recipe from Guadeloupe is best made with richly flavoured dark rum from the French Islands, but any good dark rum will do. This is from ” The Cooking of the Caribbean” by Elizabeth Lambert Ortiz.
