Halloumi Loaf (4-6)

An easy loaf which can be served for breakfast or as a snack. You can use a mixture of pitted and roughly chopped olives and halloumi , or just olives if you prefer. The recipe is from Turkish Cypriot chef Selin Kiazim who runs Oklava restaurant in London. I found it in the Hospitality Action Book ” Chefs at Home”

Quick Clam Stew (2-4)

These delicious oily and garlicky clams are from ” Mezcla” by Ixta Belfrage. They can be served as a starter or a main. Instead of the chickpeas they can be tossed with pasta, or served with grilled bread or chips.

Cheesy Polenta with Curried Onions (4)

Another unusual combination from Ixta Belfrage in ” Mezcla”. The onions can be used in other recipes too- they can be served as a dip mixed with labne or yoghurt, spooned on top of sour cream topped baked potatoes, over eggs or in sandwiches, burgers and hot dogs. This recipe can be served as part of a vegetarian spread or with sausages.

Sausage and Charred Citrus Traybake (4)

Sausages in an aromatic sweet and sour sauce from ” Mezcla” by Ixta Belfrage. If you like you could add some tinned or jarred beans to make this a more substantial dish, or serve with grilled bread to mop up the juices. Tuscan or Sicilian fennel and chilli sausages are good in this if you can find them, but if not any good quality and quite fatty sausages will do nicely.

Giant Cheese on Toast (6)

A fancy cheese on toast for brunch . You can cut it up into quarters and serve with a crisp salad for lunch or dinner. Or you can cut into smaller squares and serve as a sharing snack. The recipe is from ” Mezcla” by Ixta Belfrage and can be doubled for a crowd.
